You say the values don't seem accurate but remember what you see on your screen and what will print is rarely going to be the same. Take in to account calibration issues, different color profiles, differences in paper and things can quickly look "off". Start with the values Pantone give you, run a test print and adjust if you need to. Pantone is a company purely focused on color matching. They spend a lot of time and resources on making their colors and conversions as accurate as possible.
The CMYK values Pantone supply are probably the best you are going to get without doing test prints for your specific case. And keep in mind that theres a high chance you'll never get the color you want. It has color chips for many of the Pantone colors and next to them, a chip showing the Pantone-recommended CMYK equivalent.

The conversion of colors is way more complicated than this so saying 0 65 0 means nothing without knowing what calibration standard you adhere to. And it would also be nice to know what transformation intent was used for the conversion.

RGB is a light additive color model, meaning that colors have to be added together to produce lighter colors and ultimately white.
When all of the pixels light up to full intensity, your screen is white, when they are all off, your screen is black, and any color in between is created by pixels illuminated in different values. CMYK color is a subtractive color model, meaning, that ink must be removed in order to achieve lighter colors with the lightest color you can achieve being the surface you are printing on.
You do not have to combine ink colors to create standard black, however another black known as chromatic black is created from the combination of colors without the use of black ink. When printing four color process, each color is put on the paper separately, and then layered. Zoom in on a printed image and you will notice half-toning or little dots of color layered over one another. As shown here to the left, this layering of dots is what creates the perception of a solid. Industrial color offset presses, high end color laser printers, as well as the home printer used to print your family photos use the CMYK color model.
Some ink jet photo printers do include additional ink cartridges for Light Cyan, Magenta and shades of Black. Do you have a link for further investigation? I am aware of if because of my testing, I would be very careful, most likely the companies that have stocked the books are trying to get rid of the old inventory. I use them all the time. Yes, Pantone changed some of its ink formulas, dot patterns, plate process, and paper when they introduced the Color Bridge guide and retired the Solid to Process guide a couple years ago.
This changed the CMYK numbers needed to produce colors that would match the older formula. Supposedly the new formulas and swatch colors were included in the latest versions of Adobe software, but if they aren't then they are available for download from Pantone.

If you've ever had to print a Pantone-colored logo to a CMYK press, you know it can be difficult to achieve the perfect color match. Some Pantone colors simply cannot be reproduced by CMYK, though many can be if you use the right conversion method.
Problem is, many different designers advocate many different methods, from the Pantone Process Guide to simply using a Pantone to CMYK conversion chart or swatches.
The simplest explanation is that Pantone is a popular spot color system and CMYK is a process printing system. Pantone spot colors are solid inks assigned numbers that look the same no matter who prints them, which is why spot color is especially important for corporate identities and branded images.
Since there are variations between presses, press operators and other factors, CMYK colors are not guaranteed to be perfectly reproduced between printers or even print jobs.
In practice, Pantone is favored for solid colors such as those used in logos and letterhead; while CMYK is favored for mixed colors such as those evident in multi-colored photographs. The only way to incorporate spot color Pantone into a rasterized CMYK image is as an extra plate, or spot color channel in Photoshop. One can also create a monotone, duotone or tritone from a CMYK image. To do this the image can not remain in CMYK mode.

The process is much easier to do in a vector file. Using the eye dropper or color picker tool in Photoshop one can measure the amount of cyan, magenta, yellow and black in a specific area. Using the swatches palette open the appropriate Pantone library, find the desired color and measure the CMYK content in the same manner.
The thing is: even if I select the same color profile in Photoshop and Illustrator, the results are not necessarily the same. Many a designer has been driven to drink or looking for bridges to jump off because their spot colors in PS, ID and AI all looked different.
So I offer this in the spirit of preserving good peace of mind among colleagues everywhere Photoshop and Illustrator, despite both being from Adobe, are completely different applications. Variations are inevitable in most any situation. As to why they are different is a question only Adobe can and will probably never answer.
Your best best in this case is to use the conversion you like more, verify all colors with Pantone swatch books, and custom color swatches and styles to ensure alignment of colors across files and applications. This agreement does not cover all the Pantone color libraries, therefore, you might not find certain Pantone libraries in Illustrator and other Adobe applications.

In addition, both these applications have independent update cycles, so recent updates to Pantone libraries may not be immediately available under Adobe applications. Changing the document color mode back again is a second conversion, not a return to the original color.
Color system manufacturers create standardized colors for communicating color information across apps and processes. These standardized color libraries are called color books. CMYK values were whole numbers.
Pantone color books, introduced in CS2, use Lab values as the color definitions. The equivalent CMYK values aren't always whole numbers. In Adobe Illustrator, you add named color swatches, such as manufacturer-supplied spot colors, to the document swatches.
Therefore, to add Pantone Plus spot colors to your document swatches, define spot colors using Lab values. And because the spot colors use Lab values, the visible results are much closer to the real inks available. Using Lab values for spot colors also reduces the difference of appearance between the Normal and Overprint Preview viewing modes. CMYK, as a color mode, has a fairly limited gamut.
Representing Pantone spot colors in CMYK values results in a wider difference of appearance between printed output and digital artwork. Copy all Pantone libraries with extension. Use this workaround only if you encounter missing colors in legacy documents opened in Illustrator CS6 or CC. It is not recommended to use older Pantone libraries to add new colors to a document. There is no change in this process. To add a spot color to a document, open the color book and click the desired swatch.
CMYK values took priority over Lab values. The spot color added to the document usually came with CMYK values. This workaround makes the Pantone spot color uniform across different versions of Illustrator. Files from earlier versions open successfully.
